Spaghetti Bolognese

This is just some notes from a show

# Brown some ground carrots, onion, and celery (pureed)

# Add in meat (ground beef) and copious salt. Brown it.

# Add Tomato Paste. Brown it.

# Add a powerful red Wine, like Cabernet. Reduce it.

# Add water, so it covers meat by 1 inch.

# Taste for flavor, and maybe add salt.

# Add Thyme and Bay Leaf (which will remove later). Reduce.

# Remove some of it.

# Add undercooked pasta to pan and heat together.

# Add a little cheese and olive oil

# Stir vigorously.

# Serve
