Beef Tenderloin Marinade By Paula Deen

(amounts guessed from observation)

3/4 c lemon juice
2 c water
2 c soy sauce
1 1/2 c brown sugar
1 c parsley, fresh
2-3 tbsp thyme, roughly chopped/snipped
1 tbsp Worcestershire sauce
1 c bourbon

# wrap tenderloin in twine to keep it together after it is cooked

# put tenderloin in pan

# pour marinade over loin

# cover

# place pan in refrigerator between 4 hours and overnight

a loin with the girth of a baseball will be medium rare in about 25 minutes.  Rotate the meat occasionally to ensure even heating.  She took hers out when it was about 125 degrees.  That was a little under medium rare, she said, but that it would continue cooking off the grill.
